Baton Rouge, La (NBC33) — You can have it boiled, fried and in all kinds of dishes, but a local woman is putting a new spin on how to get your crawfish fix.
Swamp Seeds are a new snack with a Cajun twist.
Cathy Bryant is the co-creator of Swamp Seeds. She perfected her recipe in her kitchen.
"It’s like a party going on in your mouth. It’s a perfect match between sunflower seeds and Cajun boiled flavor,” stated Bryant. “In the beginning, I’d cook up the seasoning and apply it to the seeds in a homemade fashion. Family, friends and everybody were like, ‘Wow, that is good.’”
Soon enough it was out with the Ziploc bags and into more marketable packaging.
“I asked my son to draw something fun with a Cajun theme. I put the bag in front of a distributor, and they said, ‘Wow, if the product tastes as good as the bag (looks), you’ve got a hit!’”
The seeds became a hit almost instantly.
"During the first month, sales were approximately 5,000 bags; that was October 2011. By April 2012, 90,000 bags were sold; we are saturating Louisiana fast."
Bryant’s creation has also become a big hit with celebrities.
“Lynyrd Skynyrd - they loved them. Bruce from ‘Swamp People’ sent us an autograph that he signed to Swamp Seeds. Also, probably eight to ten Saints players sent autographs after tasting the seeds; they loved them."
Swamp seeds are also a big hit in Afghanistan with the troops.
Bryant’s story is an inspiring success story; she practically reinvented herself in her while in her 50’s.
“I hung wallpaper for 30 years. I loved it, and it supported my family. But, I had to have hip replacement surgery, and I could no longer climb a ladder."
When one door of Bryant’s life closed, another one opened wide open.
“There are so many sunflower seeds and so many different brands, but there is no Cajun boiled flavor, there is no seasoned kernel. This is a seasoned sunflower kernel that's already shelved.”
According to Bryant, crawfish-flavored sunflower seeds are just the beginning - be on the lookout for gumbo flavored sunflower seeds to hit store shelves in 2013.
Also, good news for all LSU baseball and softball fans - Swamp Seeds will be on sale at Alex Box Stadium and Tiger Park all season long.
